Mother of the Month Recipe - Andrea Middleton

This sounds delicious...can't wait to try it!

My favorite go-to recipe is called Jackpots;

1 lb ground beef (I use turkey)
½ C. Ketchup
2 T. Brown Sugar
1 T. Yellow Mustard
1 &1/2 tsp. Worcestershire Sauce
1 T. Minced onion (dried works great)
shredded cheese (whatever you have)
1-2 tubes of buttermilk biscuits (grands work best)

Brown meat and drain, in same skillet combine brown sugar, Worcestershire Sauce, Ketchup, Mustard, and Minced Onion, add meat and simmer for 5 min.

Place 1 biscuit in each in each un-greased cup cake cup pan and press dough up sides. Next, spoon mixture evenly into shaped biscuit. Sprinkle cheese on top. Bake at 400 degrees for 8-10 minutes or until slightly brown

Mother of the month Recipe - Jen Israelsen

MEATLOAF:
1/2 c. milk
3/4 c. seasoned bread crumbs
1 lb. hamburger
1/4 c. onion
1 tsp. salt
dash of pepper
1 grated carrot
1 egg

Sauce:
2 TBS mustard
1/4 c. brown sugar
1/2 c. ketchup

Cover; bake 350* for 1 hour

So...I've always liked this recipe and it is pretty simple. It also reminds me of the Christmas Story; Randy's "Meatloaf, beatloaf, Double Double Deatloaf, I HATE meatloaf!" and when Ralphie says (as his mother keeps getting up to refill everybody's plate), "My mother hadn't had a hot meal in 14 years." Such is the life of a mother :)

Creamy Potato Soup


Every week we have "Family Dinner" with everyone living here on the Iverson Ranch! It is so much fun to get together and share a meal with everyone. It keeps us connected at least once a week, and we get to sample every one's cooking!

This last week for our turn, I made a Creamy Potato Soup. I kind of made it up as I went, so the recipe is kind of haphazard but I'll try to explain it the best I can.

5 or 6 large potatoes
3 cups of water
4 tablespoons of butter
2 tablespoons of olive oil
4 or 5 stalks of celery
1 large onion
1 green pepper
2 tablespoons of minced garlic
3 tablespoons of tomato bouillon (trust me on this, it is so good)
1 tablespoon of Italian seasoning
2 bay leaves
1/2 teaspoon of cayenne pepper
1/2 teaspoon of ground black pepper
3/4 cup of flour
3 quarts of whole milk


Chop potatoes into bite size pieces and place in large stock pot with 3 cups of water. Bring to boil and boil until potatoes are cooked to your liking. In saute pan on medium heat add butter and olive oil. Chop onion, celery, and green pepper and add to the butter and olive oil. Cook veggies until slightly soft. Add 2 tablespoons of minced garlic, stir in. Add Italian seasoning, tomato bouillon, bay leaves, cayenne and black pepper. Cook everything for about 3 minutes. Add 3/4 cup of flour to veggies and cook for a couple more minutes to get rid of the raw flour taste. Add veggie/seasoning mixture to the stock pot with water and potatoes. To the pot add 3 quarts of whole milk, bring temp back up to low boil, stir and let simmer long enough to thicken. Remember to remove bay leaves

Serve with some delicious bread and eat! In this case we used a nice Jalapeno Cheddar bread from the grocery store. So warm and satisfying on a cold day!

Fajitas!!



I didn't have time to make the recipe and take a photo of it, so I stole one from the internet. When I make them, I'll take a photo of the real thing and post it! Mindy and Jason had us over for dinner about a month ago and made these for us. They were absolutely delicious! I highly recommend making them for your family asap! Photo taken from here!

1. Chicken cooked in soy sauce and coke
2. Onions and green peppers cooked on high in butter and a sprinkle of ginger powder
3. Refried beans heated in micro wave
4. Tortillas
5. Shredded cheese
6. Chopped tomatoes
7. Chopped olives
8. Sour cream
9. Avocados mashed and mixed with garlic salt
